Paleo Recipe: Slow Roasted Apple Rasin Pork

I HAVE to share this recipe with you guys! I found it on CrossFit Inspire's Website. I did adjust it a little bit but I think it's pretty much fool proof.



Apple Glazed Pork Roast (crockpot)
--------------------------------------------------
3-4 lb. pork loin roast (well trimmed) (I used a 'pork roast' I'm not sure of the difference)
salt and pepper
4-6 apples, cored and quartered (peeled, optional) (I used 2 apples since it was a smaller roast (1.5lb)
1/4 cup apple juice (completely left this out... by accident, but i would use water instead, apple juice may contain too much sugar)
3 Tbsp. raw honey (Honey is paleo according to THE PALEO DIET book, though it should be eaten rarely.)
1 tsp. ginger
Mustard
Celery
Raisins
Rub roast with salt and pepper. Brown under broiler to remove excess
fat, drain well. (I did this on the stove in a skillet for about 3-4 minuets on each side)



Place (some of the) apple quarters celery and raisins in bottom of crockpot (drizzled with a squeeze of honey). I spooned over some of my aunt's home made mustard over the sides of the roast, then I placed the roast on top of the apples. Combine rest of ingredients, spoon over roast (a little more honey) the rest of the apples go great on top. Cook on low for 10-12 hours.



This worked out super easy. Total Prep Time: 10 Minutes!!! I put it together the night before and put the ceramic pot in the fridge. I put the ceramic pot in the cooker before I left for work (around 8am) then I turned it off when I got home (around 7:30pm). It was perfect!


The raisins become plump and the apples add a nice flavor when eaten with the pork. Drizzle the juices on top of the meat for more flavor. It falls apart on your plate!
