Paleo Recipe: Cabbage, Onions and Bacon

This one is on the top of my list of favorite side dishes for sure! Its sooo tasty (and requires little prep!)

1Green Cabbage (makes about 2 servings)
1 Onion
2 T Olive Oil
Sea Salt
Black Pepper
3-4 slices of bacon cut into 1/3's.

Quarter and core the cabbage. Cut thinly (set aside). Warm up 2 T of olive oil on the stove in a dutch oven or large pot that has a lid. Cut onion thinly - put into pot and cook about 3 minutes until tender - add salt.



Once tender add cabbage and mix together add more salt.


Cover and cook about 20 minutes (I opened it to stir occasionally). It's done when the cabbage is glassy and tender.



Seperately cook the bacon and dry on paper towels. Cut up into desired size pieces and stir into cooked cabbage. Serve and enjoy!

Optional:
Add the bacon fat to cook the onions in instead of olive oil
Don't add bacon for a vegetarian side dish - still very tasty!
