Ginger Stuffed Chicken with Sesame Spinach
Ingredients:
4 - 6 oz boneless chicken breasts
2 Tablespoons grated fresh ginger
Kosher Salt and Black Pepper
3 Tablespoon Olive Oil
2 Teaspoons Sesame Seeds
2 Bunches of Spinach, stems removed
Equipment:

Directions:
Pat the chicken dry with paper towels, (it calls for the ginger to be tucked under the skin - I would rub it on the outside as a marinade instead) season with salt and pepper. In a large skillet, heat the olive oil over medium heat. Add the chicken, cook until edges are brown and chicken is cooked through (6-8 minutes) In another large skillet, heat 2 Tablespoons oil and sesame seeds over medium heat until the seeds are golden, 1-2 minutes. Add the spinach, salt and pepper and cook, tossing frequently until wilted, about 1-2 minutes.
Serve and enjoy!
Turkey Burger
Ingredients:
3/4 lb ground turkey
1 medium zucchini, grated
1 medium carrot, grated
2 cloves garlic, chopped
1 large egg
1 1/2 teaspoons dried thyme
Kosher salt and black pepper
3 Tablespoons Olive Oil
Lettuce leaves for cups
Equipment:
Large Bowl
Skillet
Directions:
Heat broiler. In a large bowl, combine the turkey, zucchini, carrot, garlic, egg, thyme, 3/4 teaspoons salt, and 1/4 teaspoon pepper. Form the mixture into four 1/2 inch patties. Heat 1 tablespoon of oil in a large skillet over medium heat. Cook the patties until no trace of pink remains, 4-5 minutes per side.
