2 Paleo Recipes: Ginger Chicken and Turkey Burger

Here are two more recipes from REAL SIMPLE. (adjusted to fit Paleo Diet) that you can make in under 30 minutes!

Ginger Stuffed Chicken with Sesame Spinach
Ingredients:
4 - 6 oz boneless chicken breasts
2 Tablespoons grated fresh ginger
Kosher Salt and Black Pepper
3 Tablespoon Olive Oil
2 Teaspoons Sesame Seeds
2 Bunches of Spinach, stems removed

Equipment:
Skillet

Directions:
Pat the chicken dry with paper towels, (it calls for the ginger to be tucked under the skin - I would rub it on the outside as a marinade instead) season with salt and pepper.  In a large skillet, heat the olive oil over medium heat. Add the chicken, cook until edges are brown and chicken is cooked through (6-8 minutes) In another large skillet, heat 2 Tablespoons oil and sesame seeds over medium heat until the seeds are golden, 1-2 minutes. Add the spinach, salt and pepper and cook, tossing frequently until wilted, about 1-2 minutes.

Serve and enjoy!

Turkey Burger
Ingredients:
3/4 lb ground turkey
1 medium zucchini, grated
1 medium carrot, grated
2 cloves garlic, chopped
1 large egg
1 1/2  teaspoons dried thyme
Kosher salt and black pepper
3 Tablespoons Olive Oil
Lettuce leaves for cups

Equipment:
Large Bowl
Skillet

Directions:
Heat broiler. In a large bowl, combine the turkey, zucchini, carrot, garlic, egg, thyme, 3/4 teaspoons salt, and 1/4 teaspoon pepper. Form the mixture into four 1/2 inch patties. Heat 1 tablespoon of oil in a large skillet over medium heat. Cook the patties until no trace of pink remains, 4-5 minutes per side. Meanwhile, place the bread on a broiler-proof baking sheet and brush with the remaining 2 Tablespoons of oil. Broil until golden and crisp, 1-2 minutes. Place in lettuce cups and enjoy!
